Mushroom Mixture
- 150 grams mixed exotic mushrooms (such as porcini, King Oyster, shimeji, or shiitake), sliced and chopped into similar medium-sized pieces

- 1 teaspoon fresh thyme leaves, stripped from the stalk and chopped
- 2 teaspoons miso paste
- 2 garlic cloves, crushed
Finishing and Serving
- 1 large or extra large free-range egg yolk
- Freshly grated Parmesan cheese, to serve
- A sprinkle of finely chopped flatleaf parsley
- Toasted ciabatta or other good bread
Instructions
- Heat the Butter: Heat a non-stick skillet over medium-high heat and melt the butter until sizzling hot, preparing the pan for sautéing the mushrooms.
- Sauté Mushrooms and Thyme: Add the mixed mushrooms and thyme leaves to the skillet. Cook, stirring occasionally, until the mushrooms begin to brown on both sides. If the mushrooms are not searing properly, increase the heat slightly to achieve a nice golden brown.
- Add Miso and Garlic: Incorporate the miso paste and crushed garlic cloves into the skillet. Toss and stir continuously to evenly coat the mushrooms and infuse them with the aromatic miso-garlic flavor.
- Finish Cooking Mushrooms: Continue cooking the mushrooms until they are browned and softened but still retain a slight firmness to maintain texture. Remove the mushrooms from heat and transfer them onto a serving plate.
- Add Egg Yolk and Toss: Add the free-range egg yolk to the warm mushrooms on the plate and gently toss to coat all the mushrooms well, allowing the richness of the yolk to enhance the dish’s flavor and texture.
- Garnish and Serve: Sprinkle freshly grated Parmesan cheese and finely chopped flatleaf parsley over the top. Serve immediately with toasted ciabatta or your choice of good-quality bread for a satisfying accompaniment.
