Description

This Pomegranate Brie Crostini appetizer combines the creamy richness of brie cheese with the sweet-tart burst of pomegranate seeds, balanced by a honey drizzle and crisp toasted baguette slices. Perfect as an elegant starter or party snack, these crostinis offer a delightful mix of textures and flavors in just 30 minutes.

Ingredients

Scale

Bread Base

  • 1 baguette, cut into 1/2-inch slices
  • 2 tbsp olive oil (for brushing)
  • 1 tsp garlic powder (optional)
  • Salt and freshly ground black pepper, to taste

Topping

  • 8 oz brie cheese, sliced
  • ½ cup pomegranate seeds
  • 2 tbsp honey (for drizzling)
  • 1 tbsp fresh thyme leaves (optional, for garnish)

Instructions

  1. Prepare the Bread Slices: Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet. Brush each slice lightly with olive oil and sprinkle with garlic powder, salt, and pepper to taste.
  2. Toast the Crostini: Place the baking sheet in the oven and bake for about 10-12 minutes, or until the baguette slices are golden brown and crisp around the edges. Remove and set aside.
  3. Add Brie Cheese: Place a slice of brie cheese on each toasted baguette slice while they are still warm to slightly soften the cheese.
  4. Top with Pomegranate Seeds: Scatter pomegranate seeds generously over the brie-topped crostinis for a burst of vibrant flavor and color.
  5. Drizzle with Honey and Garnish: Drizzle each crostini with honey to add a touch of sweetness, then sprinkle fresh thyme leaves on top if using for an aromatic finish.
  6. Serve: Arrange on a serving platter and serve immediately for best texture and flavor.

Notes

  • If garlic powder is not preferred, fresh minced garlic can be mixed with olive oil for brushing.
  • Substitute fresh thyme with rosemary or leave out herbs altogether based on preference.
  • Brie can be gently warmed before slicing to make spreading easier.
  • For a nutty crunch, sprinkle chopped toasted walnuts or pecans over the crostinis.
  • This appetizer pairs well with sparkling wine or dry white wines.
