Bread Base
- 1 baguette, cut into 1/2-inch slices
- 2 tbsp olive oil (for brushing)
- 1 tsp garlic powder (optional)
- Salt and freshly ground black pepper, to taste
Topping
- 8 oz brie cheese, sliced
- ½ cup pomegranate seeds
- 2 tbsp honey (for drizzling)
- 1 tbsp fresh thyme leaves (optional, for garnish)
Instructions
- Prepare the Bread Slices: Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet. Brush each slice lightly with olive oil and sprinkle with garlic powder, salt, and pepper to taste.
- Toast the Crostini: Place the baking sheet in the oven and bake for about 10-12 minutes, or until the baguette slices are golden brown and crisp around the edges. Remove and set aside.
- Add Brie Cheese: Place a slice of brie cheese on each toasted baguette slice while they are still warm to slightly soften the cheese.
- Top with Pomegranate Seeds: Scatter pomegranate seeds generously over the brie-topped crostinis for a burst of vibrant flavor and color.
- Drizzle with Honey and Garnish: Drizzle each crostini with honey to add a touch of sweetness, then sprinkle fresh thyme leaves on top if using for an aromatic finish.
- Serve: Arrange on a serving platter and serve immediately for best texture and flavor.
Notes
- If garlic powder is not preferred, fresh minced garlic can be mixed with olive oil for brushing.
- Substitute fresh thyme with rosemary or leave out herbs altogether based on preference.
- Brie can be gently warmed before slicing to make spreading easier.
- For a nutty crunch, sprinkle chopped toasted walnuts or pecans over the crostinis.
- This appetizer pairs well with sparkling wine or dry white wines.
